This week has been, something. Really something. AM I RIGHT? I’ve talked with many of you and feel like I’m not alone in this week being a dumpster fire in some ways.
Monday, I stayed as far from social media as possible, and skied which my oldest kiddo and our friends, and we had a blast. There’s something about sitting on a chairlift (or doing anything else with your kid) when they look at you and say “mom, I love doing spending time with you.” Melts everything.
Then two flat tires, replacing said tire, food poisoning, grumpy kids/tough mornings, tears (from many of us), a work blow-up, and some other stressors - this week was a lot.
This weeks favorites are a quick list of things that have helped me stay sane this week.
Good Culture Strawberry and Chia Cottage Cheese - I’m working on eating breakfast this week, and in addition to my AG1 with protein powder, I have been loving this cottage cheese.
Crock Pot/Instant Pot Dinners - I have been trying to spend more time with the kids at night instead of making dinner, so this week, everything was made in the CrockPot or InstantPot (same device different setting). I think we might have overdone it on the chicken this week, but overall, it was nice to not have to think about cooking.
Insight Timer - So many guests have recommended this app for meditation, and I am trying to become a meditator. I’m liking it so far! I have also put it on one of my screens as a widget, and I am reminded to do it every day! I like that I can put in what I am looking for - trust, confidence, patience etc. I accidentally forgot to cancel the “Plus” Subscription, but can tell you, you do NOT need it. Don’t be me.
More Water - My mom’s chat “Accountabilibuddies” Thread has been sharing reminders to drink more water, and this has been a helpful reminder for me! I have been filling up my water bottle at the same time as my Iced Tea and bringing both around every where with me. Also, that chat is a huge inspiration to stay active.
Calls with Friends - I am a person who needs to talk things out, and calling friends who’s opinions I trust is one way I do that! I got the chance to chat with a few friends this week who helped me chat through a big decision, and I am so grateful for their time and insights, and it was a reminder to me to just pick up the phone or schedule a call more often.
What’s for Dinner
Monday - Mexican Chicken and Rice - Defined Dish favorite recipe
Tuesday - White Chicken Chili - This was good, if not a bit bland.
Wednesday - Miso Peanut Bowls - We’re on a protein journey here. This was really easy and was a hit.
Thursday - Chicken Tacos - I just put chicken breast in the Pressure Cooker with a can of enchilada sauce and cooked it up quickly. Served over rice!
