Five Friday Favorites:
Here are some little things that are making A Day In My Life a little more calm this week:
Fellows Corvo Kettle - Hattie Sparks Collins (Episode 34) recommended this kettle, and I immediately put it on my Christmas list. I am absolutely obsessed with it. It heats the water so quickly, and I love having a cup of tea after dinner each night. It looks so nice on the counter.
Tea Cup - This goes with the above, but it’s been my daily cup for tea. I love that it has a lid to rest my tea bag in when I take it out, and if I use loose tea, it can rest in the lid too. I really love having tea each night, and it helps me relax into bedtime.
SnowStopper Mittens - We had our first (very wet and messy) snow this weekend. I forgot how amazing snow is for kids. I let my son into the backyard to play by himself for over an hour. He made a “snow city” and had an absolute blast. These mittens are THE BEST. They go on and because of the long cuff, rarely come off. He never complains about his hands being cold, and they even work on my daughter, who used to always pull off her mittens immediately.
AN Balm - Someone recommended this before the holidays and I put it on my Christmas list. I have been using it for a few weeks, and it makes my face feel like a glazed donut. With the cold air my skin has been dry, and this is restoring the moisture. I love it.
Amazon Echo Show 15 - We lived with my parents for 6mo during COVID, which was such a special time for my son to spend his grandparents. When we moved out, we got an Amazon Echo Show, and my son started calling my parents every morning to Video Chat. Three years later, they still have breakfast together every morning. This fall, my husband was being targeted for some family management tablets (which look awesome) but I realized we could do almost everything we wanted to do with the Alexa. So we upgraded to a bigger one and mounted it on the wall. Now we use this for our calendar, grocery list, notes etc. In addition to video calls with grandparents and great-grandparents (we’ve gotten the whole family on this now), it is also a FireTV, so we can watch YouTube, Netflix, Prime Video etc. I could go on about the many ways we use it, but one of my best hacks was setting reminders at 8am and 5:45pm to “give H 4.75ml of Augmentin.” Remembering medications can be easy for me to forget, and having Alexa tell me really helps me to remember. It really has been a gamechanger in our kitchen.
What’s for Dinner
This week, with the snow planned on Sunday, I had an urge for some comfort food, and to make some freezer meals in the process. I usually overcommit in these scenarios, and making Chicken Pot Pie, Enchiladas, and a veggie soup at the same time on Sunday afternoon, may have been biting off a bit much. However, if I need carrots and celery for something, if I don’t plan to make something else to use them up, it usually goes to waste. Ultimately, I am grateful to have two additional enchilada meals in the freezer and at least 4 lunches ready to go.
Sunday - Chicken Pot Pie - This is a favorite recipe of the family. It’s based on this recipe, but we use Fillo dough with butter between layers instead of making the biscuit to make it easier.
Monday - Baked Potatoes - Perennial favorite. We had leftover chili in the freezer, so topped the baked potatoes with chili, cheese, broccoli, and sour cream.
Tuesday - Enchiladas - This is a really easy, no-recipe meal that I have been making for a while. These are not “official” enchiladas, but a version we like. I will share the no-recipe recipe, but it’s essentially a shredded rotisserie chicken, zucchini, squash, and onions with green salsa.
Wednesday - Risotto alla Vodka - My husband loves pasta alla vodka, so when I saw
recipe for this risotto, I knew he would love it. This was a big hit, and I liked how I could put it in the oven, clean up a bit, and then play with my kids before dinner.Thursday - Smoked Pork Tacos - We often get the shredded pork from Costco, take it out of the freezer, and mix it with salsa for tacos. Easy, and the kids love it.

She and I just chatted about some 2yo bedtime stall tactics this week, and I am feeling more confident in my approach! The gift of sleep is the best gift you can give your kid, and yourself.
